Cochinillo al horno

Necesitas un cochinillo que pese unos 4 kg aprox. No dede de pesar nunca mas de 4,5 pues su carne es la clave de esta receta. poner el cochinillo en una bandeja de horno abierto con la piel hacia ariiba y untar con manteca de cerdo. Salar. calentar el horno a unos 170 grados (depende del horno) con las resistencias de calor arriba y abajo añadir a la bandeja de horno un buen vaso de vino blanco oy otro de agua. El vino blanco no es imprescindible. Este se puede sustituir por brandy o incluso no poner mas que el agua. Solo con agua y manteca sale de lujo! El secreto para esta receta es mantener en el horno unas tres horas, echando por encima de su piel una buena cucharada de su propio caldo cada 20 minutos. este caldo que echamos por encima hace que el dorado sea uniforme La última media hora, no añadir caldo sobre la piel y servir con cuidado con la piel hacia arriba sin echar caldo sobre ella para que se mantenga crijiente.
